Chaîne des Rôtisseurs dinner

There was no better way to end this year than the Chaîne des Rôtisseurs dinner April 9th at Malis Siem Reap. Guests were treated to an exquisite six-course degustation menu prepared by Head Chef Eng Im.

Founded in 1248 by King Louis IX, the Chaîne des Rôtisseurs is “dedicated to preserving the traditions and ractices of the old guild.” It is the oldest such association in the world. The association was originally founded as a professional guild of goose roasters. The aim was to improve the knowledge of roasters and ensure that future generations were suitably knowledgeable in their trade. In 1509, King Louis XII expanded the association to include all meats, including poultry and game.

The Rôtisseurs thrived for nearly four centuries. It was responsible for developing the French culinary arts. It defined the requirements demanded to serve the Royal Table, the absolute pinnacle of French gastronomy.
