There are few experiences more essentially Cambodian than a Khmer grill, with hot slices of fresh marinated meat, and a selection of zingy dipping sauces to bring out its delicious flavours. Washing it down with a few ice-cold beers doesn’t always hurt either. It is something we all know and love and that many have grown up with. That is why our chefs at Malis bring not only the wealth of a lifetime’s experience to the question of what makes a grill really great, but also the technical knowledge to make it work beautifully, every single time.
At Malis, you can choose from a wide range of succulent, juicy meats that have been marinaded in a variety of styles reflecting Cambodia’s rich and varied culinary traditions. We then select the best sauces for complementing the mineral, earthy flavours of the meat and the sweet, warm or peppy flavours of the marinades.
And there are few restrictions. From premium Roasted Beef Steak, marinaded in kroeung and Malis seasoning to a whole Roasted Organic Chicken in a sweet and spicy marinade or a slow-roasted, lemongrass-marinated Hidden Chreav Duck, the choice only begins there. Lovers of fish have a range of options too, including Cambodia’s famed Bang Kang Lobster which we turn into an otherworldly golden treat, and Baked Goby Fish with Green Mango Dip.
If you’re looking for something really special to share with a large group, then it’s hard to beat a whole Roasted Kulen Pig, deliciously marinated, carved and served to you. This delicious, organic, sustainable pork comes from Kulen Black Pigs reared in the forests of Phnom Kulen, 45km northeast of Siem Reap. Here, the pigs roam free, foraging for their food, and providing an income for poor families while also protecting the environment on which the pigs depend.
