Our bar team in Siem Reap has been busy turning out some of the best cocktails in town, but also coming up with some interesting new flavours of their own. A lot of the cocktails we feature are deeply rooted in traditional Khmer herbs and spices, such as the Sweet & Sour, but now we have a new one that integrates the unusual flavours of the chan fruit, also known as a moon fruit thanks to its appearance as a small, pale globe, and another unexpected ingredient.
Chan fruit has a softly sweet flavour with a slightly chalky finish, which our bartenders have offset with a healthy dose of gin, lime juice, paddy herb and soda to create an earthy, deep-flavoured cocktail with a clean finish. It doesn’t fall neatly into the customary cocktail categories of sweet or sour, but stands in its own domain — much like our team.
The Chan Fruit cocktail is available in Siem Reap for $6, making for a clean, laid-back start to an evening of fine dining.
